Choc Orange Cupcake Recipe

semi sweet (milk) chocolate - coarsely chopped |

orange rind - finely grated |
| 2/3 cup |
orange juice |
| 3½ oz (90g) |
butter - softened |

brown sugar |

Pre-heat the oven to 340oF (175oC). |

Line a 12 cupcake pan, with cupcake papers. |

Place the chocolate, orange rind and juice in a small saucepan. |

Stir over a low heat until melted and smooth. |

Put the softened butter, sugar and eggs in a small bowl and beat with electric beaters until light and fluffy. |

Sift the flour and cocoa into the butter mix. Add the almond meal and chocolate mix. |

Mix until just combined. |

Divide the mixture evenly between the cake cases. |

Bake for about 25 minutes - until firm to touch. |

Allow to cool for a few minutes and then transfer to a wire rack. |
