Lemon Cream Cheese Frosting


Lemon Cream Cheese Frosting that is easy and tasty.

My brother in law was horrified that I was making a cream cheese frosting, he screwed up his face and made some comment under his breath. However, he was very quite later when he was shovelling cupcake number two into his mouth.

If you have never tried lemon cream cheese frosting before, please do. It is delicious fantastic on a carrot cake or it's good on our gingerbread cupcake.

And, I can't see why you could not substitute orange for the lemon and make orang cream cheese frosting instead.


Lemon Cream Cheese Frosting

1 oz (30g) butter - softened
3 oz (80g) cream cheese - softened
1½ cups confectioners (icing) sugar
1 tsp grated lemon rind
1. Sift the sugar.
2. Beat all ingredients together in a small bowl, until smooth and combined.
    Makes enough for 12 cakes.
    Delicious on top of our Lemon Cupcakes.
